Ingredients:
- 1 litre milk
- 1/2 cup vermicelli
- 1/4 cup ghee
- 1/2 cup sugar (or to taste)
- 1/4 cup chopped nuts (almonds, pistachios, cashews)
- 1/4 cup chopped dates
- 1/4 cup raisins
- 1 tsp cardamom powder
- A few saffron strands
- Silver leaf (optional)
Instructions:
1. In a heavy-bottomed pan, heat the ghee and add the vermicelli. Roast it until it turns golden brown in colour.
2. Add the milk to the pan and bring it to a boil.
3. Reduce the heat to low and let the milk simmer for 20-25 minutes, stirring occasionally, until the vermicelli is cooked and the milk has thickened.
4. Add the sugar, cardamom powder, and saffron to the pan and stir well. Cook for another 5-7 minutes, stirring continuously.
5. Add the chopped nuts, chopped dates, and raisins to the pan and mix well. Cook for a couple of minutes until everything is well combined.
6. Remove from heat and let it cool for a few minutes.
7. Serve the Sheer Khurma warm or chilled, garnished with some silver leaf and additional chopped nuts if desired.
